Sour Ale

Da Capo is a return collab aptly named as a follow-up to Arpeggio, the first beer we brewed together with our friends at Flying Couch Brewing.⁣

This beer is a refreshing showcase of mango, papaya and coffee from El Mirador. Da Capo brings forward ripe exotic fruit along with subtle red berries from the coffee supported by a riff of papaya and a gentle sourness to finish it all off - and to bring it all together.

HOPS

Da Capo has been brewed without the use of dry-hopping. Omitting the dry-hop is normal for certain styles of beers that focus on malts, yeast or adjunct profiles.

In these beers, bittering hops are added in the kettle to provide a background of balanced bitterness.
